
PATACONES (TWICE FRIED PLANTAINS)
You need green plantains. (One large plantain will make a nice side dish for two.)
Oil and Salt
1. Peel plantain. Cut into 1/2 inch round slices.
2. Heat 2 inches of canola or vegetable oil in a heavy duty frying pan. Fry plantain a little at a time until they are slightly golden. Remove, drain on paper towels.
3. While they are still warm, place them on waxed paper, and mash them a little with the bottom of a heavy glass. Fry plantains again making sure not to brown them. Remove, drain on paper towels and sprinkle with salt. Serve right away.
