
TOM'S BLUE BAYOU BBQ SAUCE
Sautee 1 onion finely chopped and 1 clove garlic finely chopped
in corn oil.
When onion is clear add 1 can tomato sauce and 1 cup catsup.
Add: 1 tsp chili powder
1 tsp dry mustard
1/2 to 2/3 cup of brown sugar
1 tsp Louisiana Hot sauce (Cajun Catsup)
2 tbs rice vinegar
2 tbs Orange honey
Juice of one lemon
Zest of 1/2 Lemon (grated lemon peel)
3 tbs frozen orange juice concentrate
1/2 small can chopped pineapple
1 tbs worcestershire sauce
1 tsp soy sauce
1 tsp hoisin sauce (optional)
1 sprig of fresh basil
1 tsp fresh mint leaves chopped (dry if you don't have fresh)
1 bay leaf
Salt and pepper to taste
(1/2 tsp of liquid smoke is optional for smoky taste)
Simmer for 1 hour on low heat covered, thin with sherry, sauterne, brandy or water if neccesary. This is great for chicken, cornish hens, spare ribs, beef ribs, pork tenderloin, BBQ'd shrimp etc.
